Mexican Dish – Cinco De Mayo



Cinco De Mayo !

¡Hola Amigos! Are you ready to have a fiesta in your mouth?  This dish is perfect for celebrations, parties, large gatherings, family dinners, or even a big dinner for yourself! This Mexican dish is a crowd pleaser!

For around 10 large servings, I used all the ingredients listed below! The key to making this recipe a big meal was using LOTS of rice. Left overs taste delicious, so if you make too much – do not fright! I would love to eat your leftovers 😉

 The cilantro really gives the dish a true kick! ~ Added an element of spiciness. Cilantro is perfect for a dish like this! MMM!!

 The mix of brown jasmine rice and brown rice is not necessary, but it did taste mighty good! Feel free to try using other kinds of rice and let me know how it comes out.

 For beans, I bought organic beans in a can ~ I try to avoid doing that as much as possible, but some canned foods here and there won’t ever hurt. I recommend baking/boiling your own beans from scratch if you are able to ~ That way, you can avoid any of the salt they put in the prepackaged beans – I have to admit, the beans really did make the dish taste amazing!

Let’s get this show on the road!!



  • Jasmine rice (4 cups)
  • Brown rice (2 cups)
  • Lettuce wraps • for lettuce boats!
  • Shredded lettuce, cabbage, etc. (I found a prepackaged organic mix! It worked GREAT!)
  • Black beans – One can!
  • Tri-color beans – One can!
  • Canned corn – One can!
  • Pico de gallo – 1 cup from homemade or prepackaged container!
  • Avocado – 2 avocados total
  • Red bell peppers • one!
  • Cilantro – a handful
  • Parsley – a handful
  • Green onion – a cup of onion thinly chopped/sliced!
  • Tomatoes – used 3! (Only for the homemade sauce!
  • Celery (Only for the homemade sauce)
How to Prepare:
  1. Cook the rice
  2. While the rice is cooking, chop your vegetables, cilantro, parsley,etc.!
  3. Prep your sauce!
Homemade sauce ~
1/4 red bell pepper
3 tomatoes
Avocado (1 avocado)
To make sauce: Put all the ingredients in a high speed food processor/blender and blend until the sauce is at a desired consistency. You will be mixing it in with the rice, so the consistency won’t matter TOO much :) I made mine more of a thin liquid! It made the rice taste delicious!! The red pepper, avocado, cilantro, and parsley will also be used ontop of the salad. You can use the remaining ingredients that you don’t use in the sauce to toss in the dish!
Throw it all in a big bowl!! Mix together! Left overs can be refrigerated! Eat within the next couple days for maximum freshness and deliciousness!
