Watermelon Cake

WHO WANTS SOME CAKE?  IT IS SO DELICIOUS!! Vegan. Raw. Gluten, Soy, Salt, and Nut Free. Low Fat & no preservatives. So healthy & good for you! This cake is perfect for all special occasions!  I added nuts for decoration!  I had WAY too much fun making this beauty ️I may or may not have decided to make this cake than to go to a college preview and tour! BUT IT WAS SO WORTH IT! Sorry not sorry   I hope you guys are enjoying your beautiful day/night!  Would you eat this?

If you’re looking at this cake and thinking that I’m crazy, you’re not alone. My family had many doubts, but I think I proved to them that watermelon cake is AMAZING. Here is a step-by-step guide with tips to make a watermelon cake like the one above. Perfect for parties, family birthdays, any watermelon lover, and all fruit addicts. You may be surprised at how delicious and easy it is to make this! You don’t have to wait for the cake to bake, which is an added plus. Since I wanted to make my cake perfect, it took me a total of one hour. If your cake isn’t as big as mine, you could easily make this in 30 minutes. WHAT ARE WE WAITING FOR? Let’s make some watermelon cake!!



Cake: Watermelon

Frosting: Coconut Milk

Decorations: Your favorite nuts, fruits, and berries

That’s it.

I’m not even kidding you, it is THAT easy!! AND SO DELICIOUS!! It is Vegan. Raw. Gluten, Soy, Salt, and can be Nut Free. I enjoy some nuts every once in awhile, so I decided to decorate my cake with them! The best thing about this dessert is that there are no preservatives. This cake is perfect for all special occasions!


You will need:

  • A knife
  • A spoon or hand mixer
  • Your cake, coconut milk, and toppings
  • A garbage can near by to throw away the skin of the watermelon
  • If you want a big cake, buy a big watermelon at the store. If you want a small cake, buy a smaller watermelon at the store
  • Buy coconut milk. I used two cans of coconut milk for my frosting, and it was a perfect amount for the size of my big cake.
  • Buy any toppings you want to put on your cake. I recommend berries and nuts!

To make the Frosting/whipped cream:

  1. Grab a can of full-fat can coconut milk. I use unsweetened coconut milk. Here is my favorite brand! – I love Native Forest.
  2. Place the can in the fridge overnight. This is a crucial step. You need to chill the coconut cream until it’s very firm.
  3. Remove the chilled can from fridge and FLIP it upside down.
  4. Open the can. You should see liquid. You won’t be whipping this part.
  5. Pour the coconut liquid into another bowl. Don’t throw it away – I like to use it in smoothies for a fun tropical smoothie. You can also use it in baking and cooking.
  6. Scoop the coconut cream into your bowl.
  7. Whip the cream. Grab a hand mixer or spoon and whip the cream until fluffy. It’s really too much fun.

To make the Cake:

  1. Lay your watermelon on its side
  2. Cut off the two ends of the watermelon. Since the remaining of the watermelon will be your cake, the more you cut off, the shorter your cake will be.
  3. Once you cut the ends of your watermelon, prop your watermelon up so it’s on one of the cut sides.
  4. Start slicing off the skin of your watermelon to make the round edges straight, like a cake!
  5. You can personalize your cake by making it a square shape or a circular cylinder.


Now that you have your frosting and your cake all ready to go, it’s times to lather your watermelon with your coconut whipped cream.

If it seems like it won’t stick, just add some more cream. The frosting will hold itself together once it’s thick enough. You shouldn’t be able to see the pink watermelon. If you do, that means you need more “frosting”!
